Explore the essence of Saint Romain, a charming village in the Côte de Beaune, known for its exceptional terroir. Among its distinguished climates, the steep southwest-facing slope of Combe Bazin stands out, boasting light-coloured soils rich in marl, limestone, and clay. This estate nurtures a small parcel of this coveted terroir, over thirteen hectares, cultivating Chardonnay vines biodynamically. Employing homoeopathic treatments with essential oils, we fortify the vines' natural defenses.
Handpicked at perfect ripeness, the carefully sorted berries are gently pressed and then fermented and aged for eight months in Georgian qvevris - large terracotta jars buried in the ground - without any stirring. This unique vinification process enhances the wine's minerality and tension, characteristic of Saint Romain, while the altitude lends refreshing coolness.
