DOMAINE CLARENDON SYRAH
Domaine Clarendon is a 35-acre single stake vineyard located at the crown of Clarendon’s hills. Zero topsoil –all rocks. Vines planted in 2005.
Single stake, non-cordon trellised, dry grown vines are hand-picked and a whole berry, wild yeast fermentation ensues. This increases the retention of the grape’s varietal essence and minimizes bitter tannin extract. All pressings are returned to the barrel and bottled onsite without fining or filtration.
18 months. 50% brand new, 50% aged French oak. Barrels are finally hand selected by winemaking team for bottling.
